INGREDIENTS

2-4 whole branzinos, gutted, cleaned and scaled

1 cup chopped mixed herbs: dill, basil, chives, parsley, thyme

1 lemon, sliced thin

Salt & Pepper

Extra Virgin Olive Oil

PREPARATION:

Make a fire, or heat up a grill

Score the outside flesh of the fish into cross hatches

Salt and pepper the skin and inside.

Stuff the fish with the herbs and lemons

Place fish in fish basket or, tie twine around them

Grill for about 8 min a side. check to see that flesh is white and flaking slight. Allow to rest.
